Meet The Founders
David Nicponski
Co-founder David Nicponski is a software engineer with a longtime interest in startup companies that reshape established industries. When New York opened a new path for founders, he saw the chance to build another company from the ground up and help the community grow economically.
Pamela Nicponski
Pamela Nicponski, co-founder, comes from a CPA background. She spent the early build-out years deep in planning, paperwork, and operating detail, and she looks forward to applying that accounting background to strengthen profitability and day-to-day efficiency.
John Nicponski
Co-founder John Nicponski has a mathematics and computer science background. He joined Freshly Baked NYC in April 2023 and has focused on planning, analysis, and building systems that help the company stay adaptable as it grows.

Karon Thompson
Karon Thompson, a lifelong New York City resident with a background in political science and public policy, joined Freshly Baked in 2024 and quickly advanced within the company. The New Yorker enthusiastically embraced new opportunities as the city evolved, and he vigorously pursues them in his current role.
Nicolas Amores
Nicolas Amores brings more than 20 years of international management experience, along with an MBA and a strong background in team leadership, commercial development, and operational processes. After working in managerial roles abroad, Nicolas joined Freshly Baked NYC with the goal of helping the team grow, improving daily operations, and creating a professional, welcoming experience for every customer. He is excited to be part of the team as General Manager of the flagship Midtown location.

The Beginning
Starting the company took time, research, and a lot of iteration. The early stretch was full of long planning sessions, changing conditions, and the slow work of building a stronger network, better systems, and a clearer sense of how we wanted the experience to feel.
